Ingredients

Cupcakes

  • 1 cup all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp kosher salt
  • 6 tbs unsalted butter room temperature
  • ¾ cup of Maple Granulated Sugar
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • ¼ cup Maple Syrup
  • ½ cup buttermilk
  • 2 tbs vegetable oil
  • 1 tsp cinnamon
  • ½ tsp nutmeg

Frosting

  • 2 sticks unsalted butter room temperature
  • 1 tsp vanilla extract
  • ¼ tsp kosher salt
  • 3 cup confectioners’ sugar
  • ¼ cup heavy cream
  • 2 tbs Maple Syrup

Directions

Cupcakes

  1. Preheat your oven to 350°F. Place 12 cupcake cases in a muffin tray.
  2. Whisk together your flour, baking powder, spices and salt in a medium bowl.
  3. In a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium speed until light and fluffy – it takes about 3-4 minutes.
  4. Turn the speed to low and slowly pour in your maple syrup. Add the oil and beat again.
  5. Add your eggs one at a time, scraping the bowl well after each addition. Add in your vanilla extract.
  6. Turn the speed to low and add in a third of your dry ingredients. Mix well, then add half of the buttermilk. Repeat again, then end with the last third of your dry ingredients. Make sure there are no pockets of flour in the batter.
  7. Fill each cupcake case up until it is ¾ full. Bake for 15-18 minutes, they should turn golden brown. Allow them to cool completely before frosting.

Frosting

  1. In a stand mixer fitted with the paddle attachment, beat the butter and powdered sugar together on low speed
  2. Increase the speed to medium-high and beat until it becomes thick
  3. Add the vanilla extract, salt and maple syrup and beat on medium-high
  4. Turn the mixer to low, and pour in the cream until it becomes creamy and spreadable
  5. Use a 1M piping tip to frost each cupcake.
