  • 3 cups all purpose flour
  • 1 tbsp baking power
  • 1 tsp salt
  • 1/2 cup unsalted butter, softened, cut into 1 tbsp chunks
  • 2 tbsp vegetable shortening, softened
  • 2 cups Grade B maple syrup
  • 3 egg yolks
  • 1 egg
  • 1 1/4 cups whole milk

  • 8-oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened, cut into 1 tbsp chunks
  • 3 cups powdered sugar
  • 2 tbsp Grade B maple syrup

Preheat the oven to 325°F.

Butter and flour two 8″ cake pans.

Combine the flour, baking powder, and salt in a bowl and whisk to combine.

In an electric mixer, beat the butter and shortening until creamy and fluffy.

Add the maple syrup and beat until the mixture is smooth, 3 to 5 minutes.

Add the egg yolks and the egg one at a time, pausing until the mixture is well combined before adding the next one.

Beat in the flour in 3 additions, alternating with the milk.

Divide the batter evenly between the two pans.

Bake for 50 to 55 minutes.

Remove from the oven, allow to cool, then remove from the cake pans.

To make the frosting, beat cream cheese and butter until smooth. Add the powdered sugar and maple syrup and beat until just combined.

Make a layer cake, by icing the cake with the frosting.
